Baby Carrot Pickle

'Happy Independence Day' to all my fellow Indians.

Carrots are one of my favourites. When I went for grocery shopping last week, I was attracted by these cute little baby carrots. I bought these with the intention of making salad...but then changed my mind after coming home.I made carrot pickle. Here is a simple and absolutely tasty carrot pickle. This can be had as a side dish with any kind of rice.

I am running tight with my assignments (@ work) hence my post frequency will be less until this month end [you still can check out my other recipes ;) ].

Carrot - 200 gms
Small Onion - 6
Green chilli - 4
Red chilli - 2
Lemon - 1
Dates - 1/4 portion
Salt - As required
Turmeric powder - A pinch

  1. Chop carrot, onion and green chilli widthwise into small circles.
  2. Grind red chilli and dates.
  3. Mix chopped carrot, onion, green chilli and the ground paste.
  4. Add turmeric powder, salt and lemon juice to the mixture.
  5. Mix well and allow it to marinate for a week.

Few points based on the Comments received

  • Pickle should be refrigerated.
  • Shelf Life: I have not kept it for more than a month (it will be consumed). If you want to have a longer shelf life, you can use Vinegar instead of lemon.I generally don't prefer Vinegar.

Nutritional Fact:

  • Carrot - Rich in Vitamin A or betacarotene

Hey SeeC, the pickling queen ;-)

About a month ago, I googled pickled chili and out of all those out ther, I discovered yours Green Chili Pickle. It looked so real, just like the one I get at Asian stores (my loved one is Patak´s).
Now you re teasing me again. You have no idea, what a pickle freak I am...

Hi Seec carrots are great I bet your pickle was real tasty! Nice pictures too :)

Laavanya said...

Carrot pickle looks really good Seec. Since the carrots here are kind of sweeter than the ones in India, do the dates make it sweeter or do the chillies balance it?

Thanks Archana. You are right. We need to refrigerate it.

Thanks Viji. Wish you the same too.

Thanks Sra. I guess they are...that was how it was labelled though.
But in general, baby carrot definition varies, some cut the normal carrots into small
pieces and call it baby carrot.

Thanks Lia. Thats so nice to know that you like Indian pickles.
This is very easy to make.Do it try it on your own, you will then not like to buy it anymore.

Thanks for the information Suganya. I never knew it.

Thanks Roopa.

Thanks Dee. Carrot pickle is healthy and you can have it as a substitute to curry too.

Thanks Sharmi. I have not kept it for more than a month (it will be consumed by then).
But you can use Vinegar instead of lemon for a longer shelf life.
Generally I don't prefer vinegar.
